I left my job after nine years.<br />

I spent time interstate.<br />

I travelled overseas.<br />

I put my home on the market for a development site.<br />
<br />
I helped rural and farming families during the drought. #lovetothewest<br />

And through all of that my blog has been here to document the most part of it. <br />

The time has come to draw a line in the sand and make this blog part of history to make way for a new beginning.<br />

I may still blog here from time to time, maybe.<br />

It had to get better, because worse was not an option. Excitedly I purchased a 2kg lamb shoulder and set about the five hour cooking process. I know five hours is a big commitment (possibly longer than a Kardashian marriage) but very little labour is required.<br />
<br />
Now, this isn't a difficult recipe, but it requires a few things to be done exactly right for it to work to perfection. Most importantly, the covering in foil to ensure no steam escapes.<br />

<strong>Italian Roast Lamb</strong><br />
<br />
<u>Ingredients list:</u><br />
<br />
2kg lamb shoulder trimmed of the chunks of fat<br />
6+ cloves or a head of garlic<br />
2 tablespoons of tomato paste<br />
2 tablespoons olive oil<br />
375 mils verjuice or white wine vinegar (the verjuice is the best!)<br />
500g kumatos or small tomatoes on the vine<br />
500g cherry or grape tomatoes halved<br />
1/2 bunch thyme sprigs<br />
2 rosemary sprigs<br />
1 small jar or bottle of sugo (I use <a href="http://www.benfatti.com.au/sicilian-cherry-tomato-sauce-with-fresh-basil-p-73.html?osCsid=e0d8idaeds166965cgr5rfqjj0" target="_blank">Benfatti Sicilian Cherry Tomato Sauce</a> which you can buy at many markets around Brisbane, at <a href="http://www.thomasdux.com.au/" target="_blank">Thomas Dux</a> in Sydney and online <a href="http://www.benfatti.com.au/" target="_blank">HERE</a>) If you are unable to get your hands on sugo then use about 300mils of a good passata or pasta sauce. <br />

<br />
<u>Method:</u><br />
<br />
Heat oven to 150 degrees C<br />
<br />
Place lamb into a large baking dish.<br />
<br />
Peel and crush two cloves of garlic and mix with tomato paste and oil in a small cup.<br />
<br />
Brush or spread the tomato mixture over the lamb.<br />
<br />
Pour verjuice into pan.<br />
<br />
Cover with baking paper then two sheets of foil, sealing tightly to ensure steam stays in during the cooking process.<br />
<br />
Into oven for four hours. NO PEAKING!<br />
<br />
When four hours is up, remove from oven. VERY carefully remove foil and paper.<br />
<br />
To the liquid around the dish add the tomatoes on the vines, the cut up tomatoes, a couple more of the garlic cloves crushed then the rest garlic whole and the herbs.<br />
<br />
Drizzle with a little oil and back into the oven uncovered for 1 hour.<br />
<br />
~here is where it can get a little tricky~<br />
<br />
Transfer the lamb and using a large serving spoon and egg flip, remove the vine tomatoes to remain in tact to a serving dish. Then scoop out most of the tomatoes and the garlic cloves. <br />
<br />
Pour all liquid into a heat proof jug and using a spoon remove as much of the fat from the top as you can. Then return liquid to the baking dish onto the stove top.<br />
<br />
Pour in the sugo or passata and simmer and stir over a medium heat until the liquid is well reduced (10+ mins) <br />
<br />
Pour over meat and tomatoes in the serving dish and send to the table. With large forks to pull apart the meat.<br />
<br />
I serve to polenta and a crisp salad, some Italian red wine. <br />

There was concern from the guests of how I would clean the linen. One actually suggested I throw it away. But it's perfectly clean again after many an Italian tomato infused meal. Tucked away, stain free and ironed ready for the next event. There is a post in that I am sure :)</div>

A couple of months ago I bought a lemon curd shortcake from Brisbane's Welsh lady cake shop. I believe you either have to be a great cook and baker or you just have to know the best source for such things. I like to think I'm a touch of both and when I'm lazy I can call in the store bought experts. The Welsh Lady is one such expert. </div>

Now fortuitously, I was reading Dying for Cake by award winning Brisbane author Louise Limerick. One the of book's characters bakes cakes in the darkness of night, licking the bowl to get her hit and then freezes them.</div>

Bingo! I can freeze this cake. What's the worst thing that could happen? It might not taste great or I might forget about it. So what!</div>

Six weeks pass and one very early morning I'm looking for anything stashed in the freezer that resembles bread or a crumpet I can cook because we are out of milk and toast is in order. Plenty of UFO (unidentifiable frozen objects) then I open the Tupperware container and discover the cake I had forgotten. </div>

Then. Like a night in shining armour I remember that 1980's style yellow Tupperware container in the freezer. I reach in, open it, cut myself a huge slice and put the kettle on. </div>

Initially providing baked goods to State Emergency Services volunteers who were
sandbagging around Brisbane the direct giving network continues to grow and
help families affected by natural disasters mainly in Queensland and at times interstate

subdued mood, amidst stories of the heartache caused by the current drought
conditions. </span></span><br />

<span style="color: #3e454c;"><span style="font-family: Calibri;"><span style="font-size: x-large;">With nearly 65% of the state now drought-declared, our farmers are
slipping further and further into debt providing supplementary feed for their
stock.</span> </span></span><br />

<span style="color: #3e454c;"><span style="font-family: Calibri;">Properties that have been farmed across several generations are falling
into financial collapse. For some farmers, the stress of rising bills and stock
deaths have taken them to breaking point and suicide rates are on the rise.

Baked Relief – donations of home made goods that said “we are thinking of you,

<span style="color: #3e454c;"><span style="font-family: Calibri;"><span style="font-size: x-large;">We think it’s time to show our farmers once again that they are not
alone.</span> </span></span></div>

<span style="color: #3e454c;"><span style="font-family: Calibri;">This Valentine’s Day, Baked Relief is encouraging people to bake either
a fruit cake or ANZAC biscuits (items which travel well and have a long shelf
life) and include a personal note to a farming family. </span></span><br />

<span style="color: #3e454c;"><span style="font-family: Calibri;">These can be dropped off
to selected locations on Friday 14 February and Saturday 15 2014 and will be distributed
amongst the farming community via the Queensland Rural, Regional & Remote
Womens Network and Aussie Helpers. </span></span><br />

We arrived to hit some bars sans kids / baby at around 8:30pm on a Friday night. It was wet and cold and the warm basement hideaway Stitch Bar was just what I was after. A grown up drink. And a hot dog.</div>

How to get everything back where it belongs at any time of the day.<br />

<em>Method</em><br />
Grab a bucket / basket / box. I use one of those portable shopping baskets (its pink of course) and walk around the house or the area collecting anything which doesn't belong. I like to sing "one of these things is not like the others" at this point. Then, once its full I call "clutter bucket time" and if it is not cleared within two minutes it goes in the bin. At this point I sing "another one bites the dust"<br />
<br />
<em>Warnings</em><br />
You must be prepared to throw something out you maybe don't want to. But I can assure you, this will only happen once - watch those little sweethearts fight to get to the clutter bucket like an ibis on fish and chips!<br />
<br />
Your house will be tidy in no time!<br />

Get out of the house as much as possible. Cabin fever will kill you. Sorry, yes, you must take the kids.<br />

At around 6pm fast forward all clocks (between 30 mins and an hour forward works well) gets them to bed at normal time but they think its late. Perfect for away from home holidays because they have been so active all day they will drop to sleep no troubles. <br />

<em>Troubleshooting</em><br />
Remove any gadgets showing time (ie ipods)<br />
<br />
<em>Warnings</em><br />
Ensure you turn clocks back otherwise you could get an unwelcome early morning wake up.<br />
<br />
<em>Limitations</em><br />
Can not be used on teenagers. Too bloody smart! And don't try and get too cocky and fast forward two hours and try to put them to bed when the sun is still up. Their little bull-shit-o-meters will be on high alert and cover blown!<br />

My tip would be to pack a picnic blanket and a few staples in the food department, pick up some local produce. Read 'WINE'. Make someone else the designated driver, laugh yourself silly watching the kids enjoy the tractor pulling comp and have a little snooze on the way home! Make sure toasted sandwiches are on the menu for the kids dinner. Wine, cheese and olive morsels for the adults and you have yourself the perfect school holiday outing. HORRAH! <br />
